Ukraianian Chicken Meatball Soup / Суп с фрикадельками
This soup is delicious, very easy to cook and fun to eat, it is often a favorite soup for Ukrainian children
Here is our recipe:
Prep time: 5 mins, Cooking time: 35 mins, Total: 40 mins
Ingredients:
- 1 pound of ground chicken
- 1 egg
- 2 tablespoons of bread crumbs
- 1 medium size carrot, peeled and shredded
- 1 medium size onion, chopped
- 1 potato, cubed
- olive oil, 2 tablespoons
- butter, 1 tablespoon
- 1 tbs of semolina
- chopped fresh dill for garnish, 1 tablespoon
Directions
1. In a Dutch oven heat the olive oil in a skillet over medium heat. Add chopped onion and shredded carrot, cook until tender for about 3-4 minutes.
2. Add about1.5 L of boiling water to the Dutch oven.
3. .Add the potatoes, cut in cubes.
4. Meantime combine ground chicken, beaten egg, salt, pepper and crumbs. Gently stir until mixture is well mixed. Shape meat mixture into 18 to 24 meatballs, add them to the Dutch oven.
5. Let simmer for about 10 minutes and then add semolina to soup. Add butter.
6. Let it simmer for 3 minutes and turn off the heat.
7. Add fresh dill and let it sit covered for a few minutes.
8. Ladle into serving bowls, and garnish with sour cream (optional).
Tips:
You could substitute ground chicken with ground beaf or other kind of meat, but chicken version is the most tender and tasty.
